Apples in Abundance


On Halloween we had a few friends and neighbors over for dinner prior to "trick-or-treating". One of the moms brought us a HUGE box of large, delicious, fuji apples. I was grateful that the gesture didn't contain sugar, however the kids didn't even want to look at them. For them, it was all about the candy.

Now I have an almost full box of these apples and I have been racking my brain, trying to think of ways to use them before they go bad.

This morning (like most mornings) I was listening to Martha Stewart radio (not Martha, but one of her "experts") on Sirius and ironically, the host was talking about all the things one could do with apples. One thing she was talking about was making an Apple Tarte Tatin (you can find the recipe here ). One perfect solution for the abundance of apples I have on hand. This is super easy and can be whipped up in no time.

I am going to run to the store and get some vanilla ice cream (we are not a whipped cream kind of family) to go along with it. Tonight's oh-so simple dinner of pasta bolognese and Italian salad will be topped off with this delicious pastry.

This is an amazingly easy tart to make. Also, it is better than any Tarte Tatin I have had in any restaurant, near or far. It has the perfect balance of caramel, it is not too sweet and the apples are cooked to perfection. This recipe is a must in every one's recipe repertoire.
